Divin is the rarest thing in this category: a producer that owns its own vineyards. One hundred hectares in Touraine, planted to the grapes the Loire is built on — Chenin, Sauvignon, Chardonnay, Pinot Noir.

Because they grow it, they pick it for this purpose. The wine is made for dealcoholisation from the vine up, rather than reverse-engineered afterwards.
