The alcohol's gone. The wine stayed.
Format: 750ml
Pear, blackcurrant and blossom give this Touraine Sauvignon Blanc its fragrant opening. Nettle adds a green note, followed by vanilla, fresh wood and a touch of coffee. It's a dry white with a fresh, full palate, bringing fruit and oak together in a wine made for the table.
The base wine comes from selected Loire parcels of old vines. Part matures in stainless steel to hold onto freshness and fruit, while another part matures in barrels. That blend is central to the style: the steel keeps the fruit clear, and the oak adds complexity and a rounded fullness.
DIVIN then uses vacuum distillation, followed by aroma reintegration, to retain the grape's character and the toasted, vanilla notes from the blend. In the glass, pear and blackcurrant sit alongside the woody notes, with freshness running through the full palate.
Serve at 10–12°C with grilled Australian white fish, lemon and herbs, or a goat's-cheese, pea and mint salad. Barbecued chicken and zucchini is another relaxed lunch to try. Fresh herbs pick up its green notes, while the creamy cheese or savoury chicken gives its rounded palate something more substantial alongside.

How it is made
Every wine in the cellar is made as wine first — harvested, fermented, aged. Only at the end is the alcohol removed under vacuum at low temperature, so the aromatics and structure survive the process.
What remains sits under 0.5% ABV. A trace, not a drink.
Serving
Best served at 10–12 °C.
