Chenin Moelleux
The alcohol's gone. The wine stayed.
Format: 500ml
Candied apricot, peach and pear lead this sweet Loire Chenin Blanc, with a floral note of honeysuckle. The palate is full and generous, bringing together honey and jam-like yellow fruit. Lively acidity keeps that richness balanced, and the finish is long, fresh and rounded.
Made in collaboration with Domaine des Petits Quarts, a Loire estate known for its sweet wines, it starts with late-harvest grapes taken to overripeness with the help of noble rot. The fruit is picked by hand in successive passes, then gently pressed in a pneumatic press.
Fermentation moves slowly over several weeks in buried tanks. DIVIN follows with its low-temperature process and vacuum distillation, designed to preserve the character of the original Loire wine. That sequence retains the candied fruit, floral detail and richness that define the wine.
Serve at 8–10°C and open it at the beginning of the meal to give it some air. Finish a summer lunch with Australian peaches or apricots from the barbecue, mascarpone and toasted almonds. Or pour with a decadent cheese board of Australian blue cheese and aged cheddar. The fruit dessert picks up its peach and apricot character; salty cheese offers a savoury contrast to the sweet, honeyed palate.

How it is made
Every wine in the cellar is made as wine first — harvested, fermented, aged. Only at the end is the alcohol removed under vacuum at low temperature, so the aromatics and structure survive the process.
What remains sits under 0.5% ABV. A trace, not a drink.
Serving
Best served chilled, at 8–10 °C.
Open it at the start of your tasting and let it aerate.
