Rosé 2025
The alcohol's gone. The wine stayed.
Vintage & format: 2025 in 750ml
Zeronimo's first rosé brings together equal parts Blaufränkisch and Zweigelt from Neckenmarkter Hochberg in Central Burgenland, Austria. The vineyard is more than 50 years old, and the 2025 wine is dry, fresh and fruit-led, with a mineral character.
The nose unfolds with an inviting bouquet of strawberry frappé, finely nuanced with fresh mint and a hint of orange zest. On the palate, stone fruit and rhubarb lead into a fresh citrus finish. Floral notes and minerality sit around the fruit, in an elegant, clear-bodied rosé.
The wine begins with whole-cluster pressing: whole bunches of red grapes are pressed for the rosé. It is vinified in steel before vacuum distillation removes the alcohol, with aroma recovery included in the process.
Serve chilled at 10°C. Try fish tacos with shredded cabbage and lime, or snapper cooked on the barbecue with lemon and parsley. For a lunch that needs no cooking, toss tomatoes and peaches with feta, basil and olive oil, and serve with crusty bread.

How it is made
Every wine in the cellar is made as wine first — harvested, fermented, aged. Only at the end is the alcohol removed under vacuum at low temperature, so the aromatics and structure survive the process.
What remains sits under 0.5% ABV. A trace, not a drink.
Serving
Serve it as you would the original — sparkling and whites well chilled, reds a touch below room temperature — and always in proper glassware; the glass is half the ritual.
Once opened, keep refrigerated and enjoy within three days.
