Leonis Blend begins with In Signo Leonis, the Bayer family's Austrian red cuvée whose 2019 vintage earned 98 Falstaff points. That was the wine Katja and Patrick, Founder of Zeronimo chose when they began exploring what their cellar could offer with the alcohol removed. The ambition starts in the vineyard and in the wine itself.
Blaufränkisch makes up 60% of the blend, joined by 20% Zweigelt and 20% Cabernet Sauvignon from Neckenmarkter Hochberg in Mittelburgenland. Vines over 70 years old and two years in new French oak give this red its substantial winemaking story, before vacuum distillation and aroma recovery.
Dark cherry and wild berries lead, with orange zest, bergamot, black tea and oak spice adding detail. The palate is dry and silky, with integrated tannins and lively acidity; forest-floor notes and a long finish take it beyond the first impression of fruit. It feels light on the palate while giving you plenty to explore.

Give it one to two hours in a decanter and pour at 14 to 16°C with Australian lamb cutlets, mushroom skewers with thyme, or eggplant cooked over coals with a tomato and basil salad. Try its oak spice and dark fruit alongside the savoury char of the barbecue. A red with the structure and aromatic detail to stay at the table through dinner.

How it is made
Every wine in the cellar is made as wine first — harvested, fermented, aged. Only at the end is the alcohol removed under vacuum at low temperature, so the aromatics and structure survive the process.
What remains sits under 0.5% ABV. A trace, not a drink.
Serving
Best served at 12–13 °C, in a large Burgundy glass.
Open 30–40 minutes before pouring, or decant, to let it open up.
Pairs with bresaola or prosciutto, sun-dried tomato, miso-roasted cashews, grilled shiitake and toasted walnuts.
