Format: 750ml · 375ml Demi
Chardonnay, Pinot Noir and Silvaner make a pale-pink sparkling with strawberry, blackcurrant and cherry at its centre. Violet and fresh herbs add aromatic detail, while mineral and lightly savoury notes stay with the red fruit through a long finish. Its body is light, its acidity moderate, and the palate dry, with a fine, persistent bead.
The wine goes through alcohol removal between two fermentations. Fresh grape juice supplies character and sugars for the second fermentation, while BOLLE's selected yeast builds flavour and texture. Fermenting under pressure produces most of the bubbles. No flavourings, colour or sugar are added, and the 3.0g of sugars per 100ml come naturally from the fruit.
Serve chilled at 6-8°C. Start with Sydney rock oysters, or Australian salmon from the barbecue with tomato and basil. Try it alongside watermelon, feta and mint salad. Its red fruit, herbs and dry finish suit a table of fresh, bright flavours. Wine Enthusiast gave this rosé 93 points in October 2025, recognising its balance, persistent bubbles and long finish. It's vegan, and contains less than 0.5% alcohol.

How it is made
Every wine in the cellar is made as wine first — harvested, fermented, aged. Only at the end is the alcohol removed under vacuum at low temperature, so the aromatics and structure survive the process.
What remains sits under 0.5% ABV. A trace, not a drink.
Serving
Serve it as you would the original — sparkling and whites well chilled, reds a touch below room temperature — and always in proper glassware; the glass is half the ritual.
Once opened, keep refrigerated and enjoy within three days.
