The alcohol's gone. The wine stayed.

Vintage & format: 2003 + 2004 (Nr.2) · 750ml

At least 22 years of maturation sit behind Century Blend Nr.2. It brings together the 2003 and 2004 vintages, with 60% Blaufränkisch, 20% Pinot Noir and 20% Merlot from old vines on Neckenmarkter Hochberg in Austria's Mittelburgenland. The wine spent two years in new French oak, followed by 20 years in bottle.

That time was deliberate. The Bayer family has held back portions of its best vintages since 2002, allowing the wines to develop in the cellar. For Century Blend, every mature bottle was opened by hand before the alcohol was removed through vacuum distillation and aroma recovery. The second edition comprises 2,600 individually numbered bottles.

The glass carries the detail of mature red wine: blackcurrant and blackberry alongside cedar, leather, forest floor and eucalyptus, with a little nougat and wood spice. Its structure is fine, its character layered and savoury, with earthy, smoky notes adding to the fruit.

Open it half an hour ahead and serve at 13 to 14°C in a generous Burgundy glass. Bring it to a long lunch with slow-cooked Australian lamb shoulder finished over coals with rosemary, or barbecued mushrooms, lentils and roasted tomato. These savoury dishes are our starting point for its mature black fruit, earthiness and gentle smoke. This is a wine to open when dinner has been given the same care as the bottle.
