BOLLE Reserve Chardonnay begins with 100% Chardonnay from Mâcon in Burgundy. The base wine is gently dealcoholised, then fermented again with fresh Chardonnay juice from the same region. The second fermentation develops aroma and texture, keeping the orchard-fruit and mineral character of the wine at the centre of the glass.
Pale gold in the glass, it opens with green apple, lemon and lime, followed by white acacia blossom, hazelnut and a little spice. The palate is medium-dry and mineral, with crisp acidity and gentle roundness through a medium-light body. A clean, medium-length finish keeps the orchard fruit and citrus in view. Its freshness and texture sit together, giving you several layers to explore through the glass.
Serve chilled with Australian king prawns, lemon butter and parsley, or grilled whiting with capers. Try a warm asparagus and new-potato salad with goat's cheese as a shared lunch. Its citrus freshness and gently rounded palate invite simply cooked seafood, fresh herbs and creamy cheese. It's vegan, with no added sugar, flavour or colour. It contains 2.8g of naturally occurring fruit sugars and 15kcal per 100ml.

How it is made
Every wine in the cellar is made as wine first — harvested, fermented, aged. Only at the end is the alcohol removed under vacuum at low temperature, so the aromatics and structure survive the process.
What remains sits under 0.5% ABV. A trace, not a drink.
Serving
Serve it as you would the original — sparkling and whites well chilled, reds a touch below room temperature — and always in proper glassware; the glass is half the ritual.
Once opened, keep refrigerated and enjoy within three days.
